Parisian dessert par excellence, the Opéra pastry pays tribute to the ballet dancers of Opéra Garnier in central Paris, who used to visit the pastry shop of Cyriaque Gavillon, the French Chef who invented this famous dessert in 1955.
Traditionally in chocolate and coffee, Chef Maxime revisits the thin & visible layers that compose our Opéra entremet with flavors of pistachio and apricot.
